If someone types in 'diving watch' will a domain name of 'diving watches' come up just as well as a 'diving watch' domain (obviously the site would be optimised around both diving watches & diving watch)

Google can handle plaurals pretty well.

Meaning that one shouldn't worry as to whether you are 'watch' or 'watches'?

I would always use the plaural because the english language is easier to singularlise that it is to plauralise.

I'm a programmer and I can assure you of that.

Thanks - so that discussed plurals in domain names, what about if you are paying an SEO expert to optimise around some key words. Should I be paying once for optimising 'diving watch' and again for optimising 'diving watches'?

I have no idea how you run your business, but if you charge per key phrase then yes they are two seperate key phrases.
